Experimental Rhubarb Pie

Rhubarb pieWe picked rhubarb from Oma’s garden. Then I asked Momma if we could make rhubarb pie with it. She said yes, so I made rhubarb pie. We changed the recipe because Daddy does not want to eat gluten, because it upsets his stomach.

The pie crust did not work because it all dissolved into the the pie.  It was really sweet too. It was good as the topping though. It might be good for a cheese cake bottom.

We adapted a pie crust to fit ingredients that we had.  You can find the original here.

  • 1.5 cups ground almonds (Almond flour)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup coconut oil at room temperature
  • 2 Tbl maple sugar

Make a pie crust by preheating oven to 325 degrees.  Combine ground almonds, salt, baking soda, coconut oil and maple sugar in a bowl. Carefully press a thin layer into a deep dish pie pan. (If you use a shorter one, you will have extra topping on top).  Bake for 10-15 minutes or until golden. Preheat oven to 425 degrees.

  • 7 cups rhubarb
  • 1.5 cups sugar
  • 1/4 cup coconut flour (we ground up unsweetened coconut until fine)

Combine rhubarb with sugar and then add coconut flour.  Pour into pan.

Sprinkle remaining “crust” on top.  Bake in 425 degree oven about 25-30 minutes. Be sure to put something under the pie so it does not bubble all over the stove!

It smelled really good and tasted really good. We will have to try again 🙂

Soccer Storm

Andrea2SmileOur game on Saturday was cold and wet. Around half time the sky got all black and it started to rain and got very windy. Andrea StormI thought we were going to have a storm! The storm passed over us, but it drizzled the rest of the time. The wind kept blowing the ball out of the field, it made it harder to play!

AndreaMomma said that I made a nice head block, even though it went out. We lost, 1-3, but it was a good game.

My last home game is tonight (13 May) at the NIBCO field in Elkhart at 6pm. The last away game is 1 June at 2:00, but I am not sure where it is. I hope to play again in the fall.

 

Quilt

Fabric colorAudrey and I  are starting a quilt. Mine is pinks and purples.  My theme idea is flowers and butterflies. Audrey’s material is browns and greens and her theme is monkeys!

We sorted our colors we have been collecting into lightest to darkest. Fabric BW  Then we took pictures to make sure they were in the right order.  That was hard because I have lots of different colors. Sometimes we thought one was lighter or darker and when we saw the black and white we realized it was in the wrong place. Then we fixed it and did it again until it was all right.

We are using the book Simply Dynamic Sampler Quilts by Marianne L.Hatton.

I have been collecting cotton material and the book says a lot is good!  I don’t have a lot yet. According to the book, I have a good start though. We have been getting quarter yard pieces, but Momma says we should start getting half yards, unless it is really pretty and then we will get a little more. I guess it depends on how fast we use the material.

We started it up today because it is Fun Friday and we will try to work on it every week. I will post finished blocks when I have them.

 

 

Fort Wayne Soccer Game

AndreaWe went to Fort Wayne for our soccer game. We played against a very good team. We had fun.

I think that I did good.  I need to work on keeping the ball. Sometimes, someone would take the ball from me because I am not good at blocking or keeping the ball by me. I think I am getting better though.

I have two games coming up.  On Saturday at 3:00 in Michiana (not sure where yet) and one on Monday at NIBCO, where I have practice.

Andrea 2This week, Momma said she will help me practice keeping the ball so I do better next game.

I won’t be so tired for my next game too. We had a friend over all weekend and we stayed up later than normal. It is hard playing well when you are tired.

After the game, we had ice cream! Daddy treated us because I tried hard.Andrea 3

 

Cookies

Momma said that if we pulled weeds yesterday, we could have cookies for a treat  later. 🙂 I pulled thorns.  I made cookies.  Momma said since we did such a good job, she would make them big for us. I used chocolate chips and butterscotch chocolate chips. They were great!

Here is the recipe we usedCookie

  • 1 cup butter softened
  • 3/4 cup Demerara sugar
  • 1/2 cup sugar (add another 1/4 cup if you like it sweeter, Momma cut the sugar down)
  • 1 egg
  • 2 cups soft white wheat flour
  • 1 tsp baking soda
  • 1 1/4 cup coarsely ground almonds
  • 3/4 cup butterscotch chips
  • 3/4 cup dark chocolate chips

Beat butter with sugars and egg until creamy

Add remaining ingredients except chips, mix well, then fold in chips. Dough will be stiff

Use HUGE scoop to mold cookies.  Place on parchment lined cookie sheet if you have it.

Bake 10-15 minutes in preheated 375 degree oven. Cookies will be soft in the middle but edges will be turning brown.

Carefully take off sheet to cool slightly before eating. If they fall apart, let them sit a little bit on the cookie sheet before removing to cool.

 

Biscuits and Gravy

Biscuits and GravyYesterday while shopping, I saw some gravy mix and I asked Mommy if we could make biscuits and gravy.  She said, “sure, they are easy.” We bought some sausage.

Momma taught me how to make them for lunch today. They were easy! Momma told me what I should do, and I went and did it while Momma was busy. I did not need her help at all.

Here is what I did.

  • Make a batch of your favorite biscuits

Then get

  • 1 pound bulk Italian sausage
  • 1 onion, chopped
  • 2 tsp oil or butter
  • garlic powder to taste
  • Pepper to taste (about 1 tsp)
  • Nutmeg to taste (about a pinch)
  • 2 Tbl flour
  • Milk to cover it all, you can use more if you like a lot of gravy.

Saute onion in oil until cooked. Put in the sausage and crumble it so it is little and cook till done. Drain grease if needed.

Add flour and mix well. Turn heat to low, otherwise milk might curdle.  Then slowly pour milk over mixture while mixing.  The milk will thicken up as it cooks some more.

Season to taste.

Put gravy over the cooked biscuits and eat warm. Make sure to hide from Mark and me, because we will try to eat them all.

 

 

First Soccer Game

Soccer chaseOn Saturday, I had my first soccer game. I played defense. I almost made a goal, but the goalie caught it.  We played on a whole field (last year it was a much smaller field) Our score was 2 to 2.

It was very cold outside! I couldn’t wear my pants, so I was very cold! I hope my next game is warmer, but not hot!

My next game is on Sunday at 3:00 at the NIBCO Soccer Fields in Elkhart.
