Experiments in Chocolate

Momma bought some cacao nibs to try.  They taste interesting, kind of like concentrated dark chocolate chips. They taste bitter like coffee beans.

We decided to try making chocolate candy.  We mixed equal parts of coconut oil with the ground raw cacoa beans (Momma said raw is much better for us).  Then we added ground Demerara (unrefined) sugar.  We wanted it to blend well and not be a grainy candy. Then we added some ground almonds.  The recipe Momma used suggested ground coconut, but we did not have any.  Mix it well and put it in candy molds then put in the refrigerator and wait.  We pulled the candy to soon and it melted when we took it out of the mold, so be patient. It was good when we tasted it but melted very easily.

We had some extra and put it on top of vanilla ice cream and it was GOOD.  It was hard when we tasted it. 

We should try it again, but try it with the coconut. We are also looking for a different recipe to try.  Momma wants to see about one with cocoa butter too. Maybe it won’t melt as easily.

  1. Dear Andrea, It seems as though you learn new things every day. Good for you! Sometimes things do not turn as we wish them to. Just tell the Lord about it and be thankful that it was not worse. It is good that you are also thinking of other ways that you could make things.

    Those must have been really small moulds!
