I love canoing, so I think this will be FUN! But I have never canoed for a week, so it will probably be hard too.<\/p>\n<p style=\"text-align: left;\" align=\"CENTER\">\u00c2\u00a0\u00c2\u00a0 Here is the Biltong recipe I used. Momma found the recipe years ago and does not remember where.<\/p>\n<ul>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">3 pounds Beef (Boneless Round Roast and Sirloin are good. Silverside and London Broil are recommended)<br \/>\n<\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Coarse Kosher Salt<br \/>\n<\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Coarse Ground Black Pepper.\u00c2\u00a0\u00c2\u00a0 We used about 1 tsp<br \/>\n<\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Coarse Ground Coriander.\u00c2\u00a0 We used about 1.5 tsp<br \/>\n<\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Apple Cider Vinegar (Red Wine vinegar would be good too)<br \/>\n<\/span><\/span><\/li>\n<\/ul>\n<ol>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Cut half-inch thick strips of beef with the grain. Let excess vinegar drip off. <\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Sprinkle ground pepper and ground coriander over the meat on all sides.<\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">Dry meat.\u00c2\u00a0 We use a home dehydrator set at 145 degrees for about 18 hours. You&#8217;ll know when the biltong is ready when it is quite hard, but still a bit moist inside. <\/span><\/span><\/li>\n<li><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">If it is green, looks or smells wrong, or you are unsure about it, DON&#8217;T eat it.<br \/>\n<\/span><\/span><\/li>\n<li>We freeze it until we are ready to eat it and then we eat it within a week.\u00c2\u00a0 I don&#8217;t know how long it lasts, we eat it pretty fast.<\/li>\n<li>OPTIONAL:\u00c2\u00a0 Use garlic, soy sauce, Worcestershire or other favorites after applying vinegar.<\/li>\n<\/ol>\n<p style=\"margin-bottom: 0in;\"><span style=\"font-family: Century Schoolbook L,serif;\"><span style=\"font-size: small;\">\u00c2\u00a0<\/span><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00c2\u00a0\u00c2\u00a0\u00c2\u00a0 We are going on vacation!\u00c2\u00a0 I made biltong; a beef jerky from South Africa.\u00c2\u00a0 We did not want to buy jerky with all the yucky stuff in and because biltong tastes so much better than jerky. \u00c2\u00a0\u00c2\u00a0 We are going to Mark Twain National Forest to go canoing!
